Crème Brûlée with Ossau Iraty

Ingrédients (pour 4 personnes)

- 200g / 7oz of Ossau Iraty Brebis cheese
- 25cl of fresh cream
- 100g / 3oz of suger
- 6 eggs
- Pepper

Préparation de la recette :

1. Cut the Ossau Iraty cheese in pieces and melt in the fresh cream until to bring to high heat

2. Whip the egg yolks and the sugar until obtain a frothy mixture

3. Mix with the Ossau Iraty cheese cream and pour the mixture

4. Butter the sides and bottoms of 4 ramekins

5. Heat (145°) in the oven (45 minutes)

6. Put 1 minute under the grill to caramelize the surface of the meat
