Chorizo Pastries with Ossau Iraty

- 1 puff pastry
- 1 Chorizo
- 250g / 9oz of Ossau Iraty Brebis cheese
- 1 egg yolk
- Espelette Pepper
Préparation de la recette :
1. Preheat the oven to 180°C
2. Cut thin slices of chorizo.
3. Roll out the pastry and cut it into circles with cookie cutters or an inverted glass (bigger than a slice of chorizo).
4. Place the slice in the middle of the circle and add some piece of cheese.
5. Sprinkle with Espelette chilli pepper
6. Close it by using the egg yolk and pinch it
7. Brush each side with egg yolk and cool them in the over 5 to 10 min.
Taste them warm or lukewarm with a salad or as appetizer.
