Our cheese dairy...

Located in the heart of Basque Country, right in the center of the milk collection area for Ossau-Iraty, Macaye is the ideal location for a cheese dairy. Pronounced “mah-kaiye”, this small village is nestled at the foot of the Pyrenees Mountains near Espelette. We process milk from around 250 farms, to produce an authentic and succulent cheese using ancestral techniques and traditional know-how at our state-of-the-art facility.

The wedges are aged in our cellars (haloirs) where they develop unique aromas and yeasts found only in our facility… one of Onetik’s little secrets.
