Tout d\u2019abord, celle du lait en caill\u00e9 (effectu\u00e9e par le fromager) et puis du caill\u00e9 en fromage. Cette deuxi\u00e8me transformation est appel\u00e9e l\u2019affinage. Les fromages frais sont plac\u00e9s et conserv\u00e9s dans nos h\u00e2loirs \u00e0 une temp\u00e9rature inf\u00e9rieure \u00e0 12\u00b0C. C\u2019est l\u00e0 que les affineurs d\u00e9butent leur travail. Ils retournent, lavent et brossent les fromages tous les 7 \u00e0 10 jours. Il contr\u00f4le ainsi la qualit\u00e9, la maturation mais aussi la conservation des fromages. C\u2019est gr\u00e2ce \u00e0 toutes ces attentions que\u00a0<strong>nos fromages d\u00e9veloppent toutes leurs richesses<\/strong>\u00a0c\u2019est \u00e0 dire leur texture, leurs saveurs, leurs go\u00fbts et leurs cro\u00fbtages.<\/p>\n<p style=\"text-align: justify;\">Les s\u00e9jours en caves sont plus ou moins longs permettant d\u2019obtenir des fromages aux saveurs diff\u00e9rentes.
