They love their outdoor lifestyle and <strong>wouldn&#8217;t change a thing<\/strong>.<\/p>\n<p style=\"text-align: justify;\">The Basque grazing prairies are home to three ancient breeds of local sheep traditionally kept by Basque farmers:<\/p>\n<ul>\n<li><strong>Black-Face Manech [<em>man\u00e8che<\/em>]<\/strong><\/li>\n<li><strong>Red-Face Manech<\/strong><\/li>\n<li><strong>Basco-Bearnaise<\/strong><\/li>\n<\/ul>\n<p style=\"text-align: justify;\">A special feature of these breeds is the magnificent curled horns displayed on both ewes and rams, of which their shepherds are particularly proud.<\/p>\n<p style=\"text-align: justify;\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-102 alignright\" src=\"http:\/\/www.onetik.com\/wp-content\/uploads\/2014\/06\/fromage-2-300x200.jpg\" alt=\"fromage-2\" width=\"300\" height=\"200\" srcset=\"https:\/\/www.onetik.com\/wp-content\/uploads\/2014\/06\/fromage-2-300x200.jpg 300w, https:\/\/www.onetik.com\/wp-content\/uploads\/2014\/06\/fromage-2-286x192.jpg 286w, https:\/\/www.onetik.com\/wp-content\/uploads\/2014\/06\/fromage-2-382x255.jpg 382w, https:\/\/www.onetik.com\/wp-content\/uploads\/2014\/06\/fromage-2.jpg 426w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/>From the end of spring to mid-October, certain herds migrate into the high mountain pastures known as <em>estives<\/em>. The migration period or <em>transhumance<\/em> remains to this day a festive and memorable occasion. Up here, at an altitude between 1 000 and 2 000 meters (3000 to 6000 feet), <strong>the animals graze in pristine meadows of fragrant grass<\/strong> while hay is harvested on the prairies in preparation for winter.<\/p>\n<p style=\"text-align: justify;\">Ewes are milked twice each day, and milk is collected daily from the farms.\u00a0 The <em>estives<\/em> are too distant for milk to be transported each day, so the special <em>estives<\/em> cheese is made on site, in <em>Cayolars<\/em>, traditional mountain pasture shelters used by shepherds.<\/p>\n<p style=\"text-align: justify;\"><em>Estives<\/em> cheese is by necessity made from raw milk in small batches and from just one herd, so the regulated term <em>fermier<\/em> can be used.\u00a0 This full-flavored cheese develops <strong>complex aromas<\/strong>, and is highly sought-after by connoisseurs.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Dedicated to their work of keeping herds in natural surroundings, our farmers invest considerable energy into caring for their animals [&hellip;]<\/p>\n","protected":false},"author":2,"featured_media":483,"parent":1110,"menu_order":1,"comment_status":"closed","ping_status":"closed","template":"page-template\/detail-metier.php","meta":{"_acf_changed":false,"footnotes":""},"class_list":["post-1112","page","type-page","status-publish","has-post-thumbnail","hentry"],"acf":[],"yoast_head":"<!-- This site is optimized with the Yoast SEO plugin v27.2 -
